This is very helpful if you're configuring multiple iOS devices from one Macintosh computer.

Go to System Preferences and select Users & Groups.  Select the user that you're logged in as, then select Login Items.  Remove iTunes Helper from the list.  Reboot your Mac and login as the same user. iTunes should no longer launch when an iOS device is plugged into your Mac.
